Kosher Guideline

The requirements of Kosher are such that all ingredients that are used in the making of a product have to be scrutinized and approved as being Kosher by a Rabbi.

To ensure and to comply with the Jewish laws as far as food is concerned. Please ensure that the ingredients from your respective suppliers are Kosher certified. If they are not then during the initial assessment of the product manufactured, may not be deemed to be Kosher.

When a Rabbi does not deem a product Kosher, a Kosher Certificate cannot be issued at any cost. We at Kosher Certification carry out on behalf of Kosher Certification Jerusalem, those initial checks and start a Kosher audit for the those suppliers that do not have Kosher certification.

It is an absolute necessity to have all your suppliers Kosher Certified. Any changes to the ingredients used to manufacture, changes to manufacturing process and/or change in suppliers, Kosher Certification India (http://koshercertification.in/) is to be informed in advance if possible.

This is a declaration confirming that all our suppliers of ingredients are Kosher Certified and if they are not we will request that they comply with Kosher requirements and take the necessary steps to obtain Kosher Certification. http://koshercertification.in/

Once a product is Kosher Certified and if in future there is a change of ingredient supplier or ingredients, or manufacturing process, we as the responsible manufacturer will inform Kosher Certification India of any changes no matter how small these changes are. This will be done well in advance of the change taking place.

We also understand that the Rabbi can with Kosher Certification India staff can visit your manufacturing site and/or the ingredient suppliers unannounced. All the costs for such a visit or any planned visit by the Rabbi and/or Kosher Certification Services India staff will be borne by the manufacturer and its ingredient suppliers.

The Rabbi and/or "Kosher Certification Services India" has the right to withdraw the Kosher Certification should standards fall and concerns about possible violation of Kosher laws.

We as the manufacturer declare that we will ensure that our product and all the ingredients used in the manufacture of our product will comply with kosher laws. We will strongly encourage our suppliers to obtain Kosher Certification.


This document outlines the basic steps to ensure Kosher Certification is acquired by a supplier/ manufacturer. No two facilities are the same and every facilityis unique and has to be treated on its own and some of these steps may not be applicable toyour facility. After a thorough investigation and a visitation by our staff we can confirm whether a kosher certification can be issued or not.

After you complete the KCJ preliminary questions on our website, do we then move to these steps:

Step1

First, an initial confidentiality agreement is exchanged and a preliminary agreement to inspect facility is signed

  1. It will include the following important pieces of information.
  2. An ingredient list for each product to be certified, their manufacturing source with name, phone number and ANY OR ALL kosher certificate(s)
  3. Details of operation and flow chart of production for each production line. This MUST include a list of ALL equipment in the plant (even of those that potential kosher product(s) is/are not produced on) and their description (stainless steel, etc.)
  4. A general schedule of production for products requested kosher certification. This should include frequency per month, and length of time per batch. If you produce your kosher product all week long please list if you produce anything else at the same time.http://koshercertification.in/

Step2

KCJ/KCI conducts research on the kosher status of each ingredient. Company is notified of ingredients that are not acceptable or may effect kosher status of program.


Step3

Initial visit to plant is made. Inspector will check ingredients, and if established in advance as possible, will kosherize equipment. See 5.0 below


Step4

A pre- approved ingredient source list is developed and finalized (this is done before kosherization if a process is possible and expected to take place at initial visit. If a kosherization takes place at a second visit, this list is confirmed between first and second visit).


Step5

Kosher Equipment Sanitation Process (KESP), all equipment must meet the standards of the kosher requirements. This means that all equipment must either go through the KESP process or replaced if unable to be kosherized.

  1. At the outset it may be assumed that most or all equipment is able to be kosherized - (stainless steel is the easiest to run a KESP) . When all the ingredients are approved, a first/second visit will be arranged. A KESP will be conducted (all equipment unable to be kosherized must be discarded and replaced at this time. A 24 hour "down" time of no production must precede the initial KESP, with a thorough cleaning and scouring of all equipment, pipes, etc.) This process will be outlined in detail for your company after application is received.
  2. The KESP usually consists of thorough washing of equipment (inside and out), a (boiling) hot water purge or dry heat applied to oven-like equipment. The details will be explained to you after the initial visit or review of your application.
  3. KCJ/KCI recommends that we kosherize your plant on Sunday when the plant is closed and after no Saturday production..
  4. All equipment must be cleaned in advance of the Inspector/Rabbi's arrival. This includes outside and inside kettles, under the lips and contours of steel tables, etc.
  5. Upon completion of kosher process, certification will be fully awarded allowing to use the KCJ/KCIlabel on the kosher certified products.
  6. Ongoing inspection and/or KSP will be conducted throughout the year

Quality Assurance and Kosher Compliance

Ingredients

In order to comply with kosher manufacturing standards, a quality assurance program must be maintained. Only certified kosher ingredients that are agreed upon prior to production by KCJ/KCI will be used. (Certain ingredients are acceptable without certification such as raw, unprocessed herbs, etc. All ingredients are handled on a case by case basis).

Walk - in visits (unannounced visits)

Program and compliance guidelines will be developed. This will insure kosher quality integrity. There are three types of inspection programs (generally).

  1. on a walk in basis ( for all kosher facilities)
  2. per batch inspections (facilities with both kosher and non-kosher)
  3. a combination between 1 and 2

Internal Audit System

Your company is responsible to maintain proper records in order for KCJ/KCI to conduct an audit control review if requested. (this includes log sheets, equipment usage logs etc.


Fees

Fees vary from facility to facility. There is a yearly fee for certification and separate charges per visit inspection. All walk-in visits are at the expense of the supplier/manufacturer.

  1. Certification is for a 12 month period
  2. Fees are paid in advance of any work commencing
  3. Yearly fee proposal will be sent after KCJ/KCI receives the initial information.
  4. Private Label manufacturers' yearly fees are Private label customers wishing to use the KCJ/KCI label on their finished products, signs a separate agreement with KCJ/KCI committing to a kosher program. http://koshercertification.in/
  5. The yearly fee for each private label customer is based on the production sought.
